Tex-Mex Stuffed Bell Pepper

Here’s a great tex-mex dish made easy at home. This light but filling dish is low calorie, packed with protein and healthy fat if you choose to add guac.
Preheat the oven at 350 degrees.
Chop the tops off the bell pepper and hollow it out using a spoon or fork.
Place peppers on a baking sheet and put in the oven for 15 minutes or until the peppers develop wrinkles on the sides.
For each pepper, scramble two eggs mixing in 2 tbsp of your favorite salsa. Cook to your preferred level of dryness.
Take the peppers out of the oven. They’re going to have a little water in them so dump that out before adding the egg.
Once the water is poured out, fill each pepper half way full and sprinkle with cheese. Add a second layer of egg and top with a little more cheese.
 Place the hollowed out tops back on the peppers. Put the peppers back in the oven and allow them to bake for 10 minutes.
